It's my little escape, a moment of pure bliss, and I can't wait to share this easy and scrumptious recipe with you all!
Let's keep it simple and gather these ingredients for our well-deserved indulgence;- Preheat your oven to 350º F (175º C).
- In a small bowl, combine the mixed berries, 1 tablespoon of sugar, 2 teaspoons of flour, and lemon juice. Make sure the berries are evenly coated with the mixture. Transfer the coated berries to a ramekin dish and set it aside.
- In another small bowl, mix the remaining 1/4 cup of flour, 1 tablespoon of sugar, baking powder, and a pinch of salt.
- Add the cold cubed butter to the flour mixture. Use a fork to cut the butter into the flour until the mixture resembles a sandy texture.
- Pour in the milk and add the vanilla extract to the flour mixture. Stir until you get a dough-like consistency.
- Place the dough on top of the berry mixture in the ramekin dish.
- Bake the cobbler in the preheated oven for approximately 35 minutes or until the top is nicely cooked through, and the berries are bubbling with goodness.
