Let's keep it simple and gather these ingredients for our well-deserved indulgence;

Ingredients:
1 cup mixed berries (Fresh or frozen, I love a medley of strawberries, blueberries, and raspberries!)
2 tablespoons sugar, divided (Sweetness to balance out the chaos)
1/4 cup + 2 teaspoons flour, divided (Our kitchen Staple)
1 teaspoon lemon juice (A zesty touch to brighten the day)
1/2 teaspoon baking powder (Our weekend magic)
2 tablespoons cold cubed butter (A bit of buttery comfort)
2 tablespoons milk (For that tender crumb)
1/2 teaspoon vanilla (Of course, why not?)
Pinch of salt - to balance it all out!

Extra tools: ramekin dish

Instructions:
  1. Preheat your oven to 350º F (175º C).
  2. In a small bowl, combine the mixed berries, 1 tablespoon of sugar, 2 teaspoons of flour, and lemon juice. Make sure the berries are evenly coated with the mixture. Transfer the coated berries to a ramekin dish and set it aside.
  3. In another small bowl, mix the remaining 1/4 cup of flour, 1 tablespoon of sugar, baking powder, and a pinch of salt.
  4. Add the cold cubed butter to the flour mixture. Use a fork to cut the butter into the flour until the mixture resembles a sandy texture.
  5. Pour in the milk and add the vanilla extract to the flour mixture. Stir until you get a dough-like consistency.
  6. Place the dough on top of the berry mixture in the ramekin dish.
  7. Bake the cobbler in the preheated oven for approximately 35 minutes or until the top is nicely cooked through, and the berries are bubbling with goodness.
  8. Once done, take it out of the oven, and now comes the best part – enjoy your warm and delightful berry cobbler!
