Resepi Asam Pedas Johor

Satu lagi resepi favourite Lin, Asam Pedas Johor - perfect balance of masam manis and a kick of spiciness. Yep, there's a lot of version of asam pedas (asam pedas melaka and else) but I'm making a Johore version (cause I'm proudly a Johorean of course) ;)

Sebenarnya jarang Lin masak asam pedas sebab I have a baby and a toodler and pre-schooler (plus one superheroes still cooking in the oven). 1st, tak sesuai dengan perut bebudak ni (not yet). 2nd, I don't have that much time to cook banyak-banyak lauk. Lin prefer lauk all-in-one-pot semua protein, sayur all-in-one macam tomyam, soup etc.

So, bila masak my favourite asam pedas macam ni dah rasa macam a kind of luxury for mom's stomach you know. Huhu. Usually Lin masak lebih, half frozenkan then baki untuk makan with some kuah left out to savour myself with toasted bread. Fuh~ indulgence sungguh.
Resepi Asam Pedas Mudah
Bahan-bahan:
1/2 ekor ayam - dipotong kecil (boleh digantikan dengan ikan)
1 batang serai - dititik
Daun kesum/Tomato/Bendi/Bunga kantan
Air asam jawa (50gm asam jawa + secawan air)
3 cawan air
Sedikit lada hitam - ditumbuk, kuantiti terpulang, kalau suka pedas boleh lebihkan lagi
Garam secukup rasa
Minyak untuk menumis
1 sudu teh ketumbar dan 1 sudu teh jintan manis - ditumbuk halus, jika suka

Bahan Kisar: (blender pakai minyak terus)
35 tangkai cili kering - gunting, rebus sekejap dan toskan

---asingkan cili kisar dan bahan kisar bawah ni---

7 ulas bawang merah
5 ulas bawang putih
1 inci kunyit
1 inci halia
Sebesar saiz ibu jari belacan - Lin

Cara Memasak:
1. Tumis bahan kisar bersama serai sehingga wangi dan baru masukkan cili kisar, tumis sehingga garing.
2. Masukkan ayam, daun kesum (dengan batang-batang sekali kalau nak) dan bunga kantan. Kacau rata dan biarkan sehingga ayam macam masak sikit.
3. Masukkan air asam jawa dan gaul sebati.
4. Tambah air (ikut kepekatan yang disukai), perasakan dengan garam dan bubuh lada hitam.
5. Letak bendi dengan tomato (Kalau nak) Tutup dan renih sehingga ayam masak. Sedia dihidangkan bersama nasi putih. Kalau ada lebih kuah, boleh cecah dengan roti ;)
